The River Restaurant Launches Autumn Menu

New Head Chef is Backing British

The River Restaurant at The Lowry Hotel in Manchester is unveiling its new menu for Autumn 2005 from September. The innovative menu has been created by new Executive Chef Eyck Zimmer, an internationally acclaimed, award- winning chef who joined The Lowry Hotel from The Ritz in London.

German born Eyck has created a contemporary modern European menu that draws upon the finest seasonal and local ingredients, whilst also introducing a range of international influences and cooking techniques, reflecting Eyck's own culinary heritage. With a carefully thought out emphasis on classic foods and flavours, Eyck has created an eclectic and enticing menu which reflect the best that the season and the region has to offer.

Eyck's influences extend from classic British dishes to the more diverse flavours of fusion cuisine. Basing his approach on the philosophy that cooking should be a 'carefully balanced reflection of all things nature has to offer', Eyck and his team of 30 chefs will be introducing a range of innovative and intriguing dishes to Manchester diners.

Eyck, who believes that a good cook creates not recipes but tastes, brings a distinctive portfolio of signature dishes to the River Restaurant including the Chef's British Classics Menu that is created using all seasonal produce and ingredients. Highlights of the British menu include roast scallops with black pudding and Bread and Butter pudding with spiced raisin syrup.

Other signature dishes that Eyck will be introducing at The River Restaurant include Warm goats cheese salad with beets and mint; Veloute of Fennel with Poached Oyster; Crayfish Risotto with squash and rocket; Scottish Lobster with cardamon scented jus and aromatic pilaf rice ; Breast of corn fed chicken with caramelized chicory, peas and morels; Chocolate delice with roasted cocoa beans; Coconut panna cotta with spiced roast pineapple.

Eyck comments: "I have worked in a variety of countries and cities and love introducing my culinary tastes to a new set of people. Manchester has a great reputation and I am really looking forward to getting to know the city.

"I always say a cook is the only artist where nothing of his creation remains. However memories of the palate can last a lifetime and that is how I hope the people of Manchester will feel about my food".

The menu is designed to offer an honest, unpretentious and 'user friendly' alternative to formal and traditional restaurant cuisine, served in the beautiful surroundings of the stunning riverside venue. With a wider choice of dishes than ever before, the River Restaurant offers something for every palate and occasion - from a light lunch of pasta or risotto to a full dining experience featuring the very best of British ingredients and influences.
